As we travel to new places, we encounter  many new things; words, attitudes,  foods, animals, cultural do’s and don’ts. Here we have recorded some that struck as as worth sharing and remembering.

The absoute BEST tacos and guacamole are found at the Taco stand by the football field in Isla Mujeres, Mexico. $12 pesos per taco with all the fixins.

Noleen's quick and easy mexican dip and lemon bars and rice salad vinaigrette.

Half Moon Cay, Lighthouse Reef, Belize -- great wall dive!

Turneffe Flats, Turneffe Atoll, Belize -- informal, friendly lodge for diving, snorkeling, fishing!

Avocadoes are considered a "luxury" fruit in Belize and cannot be purchased easily in Placencia -- sort of an under the table transaction. We have learned to ask daily but only found them once!

Isla Marisol Resort, Glovers Reef, Belize - a gorgeous out of the way location, pleasant staff (Mora, Arnold), pretty yet simple accomodations, great scuba on the local reefs diving w/ Chad, great snorkeling too. Food was delicious. www.islamarisol.com.

Personalized Diving with Kevin at KP's Dive Roatan.

Great resort for diving, snorkeling, relaxing at Plantation Beach Resort, Cayos Cachinos. Ask for rooms 10-12 since they are the newest and the nicest. Simple, quiet, friendly, good food (family style).

West End diving with Reef Gliders was very fun, friendly, professional. Barry, Sarah, Mel and Alex. Favorite dives were the West End Wall during the full moon.

Utila has the most amazing restaurant, The Jade Seahorse. It looks like it came out of a Dr. Seuss book.

Utila Dive Center - very professional & friendly staff. Natasha was our instructor for EFR and Search & Rescue. Whale shark research center at www.WSORC.com. Can intern or voluntereer here -- speak to administrator, Kelly. Dale is their bioligist right now.

Whale shark scuba trips from Isla Marisol on Glovers Reef. Best months are April and June although they are seen in May. Trips run from 2 days prior to full moon and 5 days past full moon.

Half Moon Caye, Lighthouse atoll. Gorgeous spot, great diving. Can only get there by boat! No lodging - all marine park.
